STRAIGHT FROM THE HORSE'S MOUTH: Chef Julien Asseo

Straight from the Horse's Mouth is Hotel Cheval’s take on a parlor game that was favored in late 19th-century Europe, called "The Confession Album." The game was popularized (though not created) by Marcel Proust, and later, by Vanity Fair. The idea is that by answering a set of specific questions, a person will offer a glimpse into their true nature.

CHEF JULIEN ASSEO

Until recently, Chef Asseo was the Executive Chef of the famed  and Michelin-starred Restaurant Guy Savoy in Las Vegas. Luckily for us, he has now moved to Paso Robles with his wife and young children. His parents own the world class L'Aventure Winery as well as the gorgeous lifestyle boutique, AndBe in downtown Paso Robles. Chef Asseo and his wife will soon open Les Petites Canailles, a French farm-to-table bistro specializing in local Central Coast California ingredients. Les Petites Canailles will be sophisticated and modern, yet offer casual cuisine. Opening Fall 2019.
